Low Carb Peanut Butter No Bake Booster Bites...

Hey all! I made these tonight and put my little spin on them - so I thought I would share the recipe!

Ingredients:

1 Cup Old Fashioned Oats

1/2 cup Peanut Butter

1/3 cup flax seeds (or ground flax - I prefer them in seed form and like the chewy texture)

1/2 cup honey

2 Table Spoons Vanilla Protein Powder

1/2 Teaspoon Vanilla extract

These are SO insanely easy to make... I use my KitchenAid mixer. Just toss in all the ingredients... mix them up really well... and then I just put the whole bowl into the fridge for about an hour. Once they're cool - scoop out spoonfuls and ball them up in your hands. Store them in an airtight container in the fridge for up a one week.

There are lots of recipes for these - but I wanted to make mine even more of a booster food. The flax adds really good fats and fiber, while the vanilla powder adds both protein and flavor.  They're low carb and naturally sweetened... packed with protein and a super burst of energy for low-carbers. YUM!!! ENJOY!
